Papa Charlie's Italian Beef Panini with Basil Lemon Spread

Enjoy this hot, pressed panini loaded with Papa Charlie's Italian Beef and a cheesy basil, lemon spread.
4 sandwich rolls, sliced lengthwise
2-½ tablespoons olive oil
1 small red onion (sliced)
1 cups button mushrooms (sliced)
4 slice mozzarella cheese (sliced)
1 cups fresh baby spinach leaves (pre-packaged, chopped)
½ cup sweet basil leaves (chopped)
4 ounces cream cheese, at room temperature
1 small lemon (zested and freshly squeezed)
½ teaspoon honey
¼ teaspoon salt and pepper
¼ cup coarse grain mustard
2 tablespoons butter, at room temperature
6 oz. roasted red pepper
Prepare Papa Charlie’s Italian Beef as directed by package. Meanwhile, add chopped spinach leaves, chopped basil leaves, lemon juice and lemon zest in food processor. Pulse and slowly add oil until it becomes a thick paste. Season with salt and pepper. Then, in a bowl, combine the green mixture with cream cheese and honey.

In a saucepan, heat the olive oil. Add the red onion, stir until light golden, then sauté the mushrooms for about 3 minutes. Season with salt and pepper. Remove from the heat and transfer to a plate.

Preheat your panini press. Spread mustard on one side of the bread. Spread a thin layer of butter on the crust side of the bread. Place one piece of bread (the one without mustard), butter side down onto the hot grill. Layer the sandwich with the spread, add 2 oz. Papa Charlie’s Italian Beef, 1 slices of mozzarella, some mushrooms and red onions, a few slices of roasted peppers. Close the sandwich with a second piece of bread. Spread a thin layer of butter on the crust side of the bread. Cook in Panini press (about 3-4 minutes). Remove and cut the sandwich in half on the bias.
